Chaat Recipes

1.  Aloo ki Tikki is a popular chaat recipe.  It is a very tasty item and liked by one and all in the family.  


Ingredients:



• 3-4 Potatoes [boiled]
• 3 Green Chilies [chopped]
• 1/2 tsp Red Chili Powder
• 5-6 twigs Coriander Leaves [chopped]
• Salt to taste
• A pinch of Asafoetida
• Oil to fry
Method:
Peel the boiled potatoes and mash them while still warm.
Add green chilies, coriander leaves, salt, asafoetida and red chili powder to it and mix well.
Divide the mixture into 10-12 portions, shape them into round tikkis and flatten them a bit.
Now heat a tawa and shallow fry the tikkis in oil on both sides, till golden. Drain onto an absorbent paper.
Aloo ki Tikki is ready to serve. Serve hot with Tamarind chutney, Tomato Ketchup or any chutney of your choice.

2. BHEL PURI RECIPE




Bhel Puri is an easy,  low-fat, nutritious and delicious recipe. The cooking/preparation time for this is recipe is 20 minutes.  


Ingredients:

• ¼ cup Boiled Potatoes (peeled and coarsely chopped)
• 50 gm Tamarind
• 50 gm Jaggery
• 50 gm Sev
• 1 Bunch Mint Leaves
• 1/2 tsp Chat Masala
• 1 Bunch Coriander Leaves
• 100 gm Puffed Rice 

• 3 Green Chilies
• Salt to taste



Method:


Boil the jaggery and tamarind in a cup of hot water until the mixture thickens slightly. Keep it aside.
Mix the green chilies and mint leaves. Grind to a smooth paste. Keep it aside.
Take the chopped potatoes in a bowl and toss it with chaat masala and salt. Keep it aside.
Put the puffed rice in a large bowl and add mint leaves paste.
Add chopped onions, tamarind water, sev, green chilies potatoes and mix well.
Garnish with coriander leaves.
Bhel Puri is ready to serve.

3.  DAHI PAPDI CHAAT RECIPE

Dahi Papdi Chaat is a crispy tangy chaat with a crunchy bite.  Very tasty indeed.

Ingredients:

• 24 Papdi Crisp [oiled and chopped] 
• 1/2 cup Sprouted Green Gram [Moong[(blanched]
• 1 1/2 cups Yogurt [whipped]
• 1 tsp Roasted Cumin Powder
• 1/2 tsp Red Chilli Powder
• 2 tbsp Pomegranate Seeds
• Salt to taste
• 1 tbsp Sugar
• 1/4 cup Red Chilli-Garlic Chutney
• 1/4 cup Green Chutney
• 1/4 cup Sweet Tamarind Chutney
• 1/2 tsp Chaat Masala
• 2 tbsp Fresh Coriander Leaves
• Sev as required

Method:


Whip the yogurt till smooth and add salt and sugar to it and mix well. Refrigerate.
On a plate, arrange the papdis and place potato slices on each papdi.
Top it up with boiled sprouted green gram, red chilli-garlic chutney, green chutney and sweet tamarind chutney.
Sprinkle cumin powder, chaat masala, red chilli powder and salt and chilled yogurt over the papdis.
Add sweet tamarind chutney, red chilli-garlic chutney, coriander leaves,
sev and pomegranate seeds.
Dahi Papdi is ready to serve.

4.  Pani Puri Recipe


Pani Puri is the most popular Indian chaat. It is also known as Gol Gappa. 




Ingredients:

• 1 cup Rava 
• 1 tbsp Maida 
• 1/4 tbsp Soda 
• 1/2 tsp Red chilli powder 
• 2 tsp Cumin powder 
• 1 tsp Kala namak 
• 2 tbsp Tamarind pulp 
• 200 gm Sprouts [boiled] 
• 150 gms Potatoes [boiled] 
• 1/2 cup Coriander leaves 
• 1 Cup mint leaves 
• Oil for frying

Method:

Mix rava, Maida, soda and salt to make dough.
Keep it covered by a wet cloth for sometime.
Make circle like rolls from the dough and place them in a damp cloth.
Heat oil and fry dough circles till it turns golden brown.
Puri is ready.
Grind mint and coriander leaves to make a paste.
Mix red chilli powder, cumin powder, kala namak, tamarind pulp and salt well.
Add mint corainder paste to the mixture.
Add 4 cups water to this mixture.
Masala water is ready.
Mash the potatoes and add sprouts, red chilli powder and salt.
Mix it well.
Make a hole in puri and stuff the mixture into it.
Serve Golgappe with prepared masala water

5.  PAAV BHAJI RECIPE


Paav Bhaji is a popular Maharashtrian Food. Very tasty and most popular Chaat item in all the hotels.  




Paav Bhaji 


Ingredients:


• 2 Large potatoes
• 1/2 Cup boiled green peas
• 1/2 Capsicums
• 2 Large chopped onions
• 1 Large chopped tomato
• 2 tbsps garlic
• 5 tbsps butter
• Salt to taste
• 4 Paavs



Method:


•Cut all the vegetables into small pieces.
•Fry onions in melted butter.
•Add vegetables and garlic and mix it well.
•Cook it till it turns tender.
•Add butter and cook it for 5 minutes.
•Place the Paavs on heated tawa and add spread butter on it.
•Cook it till it turns brown.
•Hot Pao Bhaji is ready.

6.  VADA PAV RECIPE


Ingredients:


• 4 Boiled Potatoes
• 2 Cups besan
• 2 Garlic flakes
• 1 Ginger
• 2 Chopped onions
• 1 tsp Cumin seeds
• 1 tsp Turmeric powder
• 1 Cup coriander
• Salt to taste
• Oil for deep frying
• 5 Pav



Method:



Add turmeric powder, salt to besan and make a mixture.
Add water to the mixture and make batter of medium consistency.
Peel the potatoes and mash it by hand.
Make a paste of garlic and ginger.
Add garlic ginger paste,coriander to mashed potato.
Make small balls of mashed potato mixture.
Heat the oil.
Dip each ball in the batter and fry the balls till they turn golden brown.
Split the pav keeping the base intact.
Place the vada into it.
Vada Paav is ready.
